Species: Myristica fragrans, or true nutmeg, is an evergreen tree native to Indonesia, prized for both its seed and its aril, the lacy red covering around the seed known as mace. The tree produces small, smooth, yellow fruit that splits open when ripe, revealing the dark brown nutmeg seed inside.
Nutmeg is a warm, aromatic spice commonly used in both sweet and savory dishes, while mace has a milder, slightly sweeter flavor. The fruit’s outer flesh, though less commonly used, is processed into jams, crystallized candies, and spiced beverages. The aril is carefully removed, flattened, and dried, changing from bright red to pale orange or tan. Nutmeg trees thrive in tropical climates and can grow up to 20 meters tall, with glossy green leaves and small, fragrant flowers.
